Ingredients

  • 100 g baby spinach leaves
  • ½ cucumber
  • 100 g tomatoes
  • 1 yellow pepper
  • 125 g mozzarella
  • 2 tsp pumpkin seed
  • 2 tsp balsamic vinegar

Instructions

  • Toss together the salad greens, cucumber, semi-dried tomatoes, and pepper in a big bowl. Place the salad on two plates for serving.
  • Place an equal amount of mozzarella on each plate, top with pumpkin seeds, then sprinkle with balsamic vinegar and tomato oil.
