- ½ cucumber
- 100 g tomatoes
- 1 yellow pepper
- 125 g mozzarella
- 2 tsp pumpkin seed
- 2 tsp balsamic vinegar
Toss together the salad greens, cucumber, semi-dried tomatoes, and pepper in a big bowl. Place the salad on two plates for serving.
Place an equal amount of mozzarella on each plate, top with pumpkin seeds, then sprinkle with balsamic vinegar and tomato oil.
