Ingredients

  • 2 kg carrots halved or quartered lengthways
  • 4 tbsp olive oil
  • 4 tbsp honey
  • 2 tbsp red wine or cider vinegar

Instructions

  • Oven temperature set at 200°C/180°F/gas 6. Bring water in a big pan to a rolling boil. The carrots should be added, brought back to a boil, and cooked for 5 minutes.
  • After being drained and steam-dried in a colander for a few minutes, combine the vegetables with the olive oil, honey, vinegar, and spices in a sizable roasting pan. Cook for 30 to 40 minutes.
