Ingredients

  • 1 1/2 cups very finely ground blanched almond flour/meal
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups Swerve Confectioner Sweetener
  • 2 teaspoons quality pure almond extract
  • 1 teaspoon quality food grade rose water
  • 1 egg white

Instructions

  • In a food processor, combine the powdered sugar and almond flour, and then pulse to break up any lumps. Pulse to blend the rose water and almond extract. As you process to create a thick dough, add the egg white. Add extra almond flour if the bulk is still too wet and sticky. Remember that when it has been chilled, it will get firmer.
  • On a work area, spread out the almond marzipan and give it a couple quick kneads. Refrigerate after shaping it into a log and covering it with plastic wrap.
  • It will keep for up to 6 months in the freezer or at least a month in the refrigerator. Before to using in any recipe, bring to room temperature.
