Ingredients

  • 3 medium oranges segments and juice
  • 1 small bunch mint leaves chopped
  • 4 tsp white wine vinegar
  • 3 tbsp olive oil
  • 2 x 250g packs halloumi cheese drained
  • 50 g walnut pieces toasted
  • 145 g rocket watercress and spinach

Instructions

  • On high heat, preheat a sizable griddle or frying pan. Orange segments, juice, mint leaves, vinegar, and olive oil should all be combined in a big basin. After seasoning, gently combine.
  • Cut each block of halloumi into 8–10 pieces, then grill or fry until blackened and starting to melt, about 1–2 minutes each side.
  • Combine the orange and mint with the walnuts and salad greens. Add some black pepper to the halloumi slices before topping.
