While they are not a replacement for the chocolate chip cookie, cacao nib cookies are a nice change and will be treasured by chocolate lovers.

Ingredients

  • 2 cups flour all-purpose
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter unsalted; melted
  • 1 cup brown sugar packed
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg large
  • 2 cups cacao nibs to taste; or more

Instructions

  • Oven: 325 degrees Fahrenheit (165 C). Cookie pans should be greased or lined with parchment paper.
  • Salt, baking soda, and flour should be sifted together and set away.
  • Melted butter, brown sugar, and white sugar should be thoroughly combined in a medium dish.
  • Vanilla, egg, and egg yoke are added and are thoroughly mixed in.
  • Add the sifted components and stir just until combined.
  • Using a wooden spoon and your hands, incorporate the cocoa nibs.
  • 1/4 cup at a time, drop cookie dough onto the cookie sheets that have been prepped. About 3 inches should separate each cookie.
  • Bake in a hot oven for 15 to 17 minutes.
  • After a brief period of cooling on the baking pans, move the baked goods to wire cooling racks to finish cooling.
