Creamy Garlic Baked Oysters In The Shell

Briny oysters are the ideal food for a delicious brunch, dinner, or special occasion when they are topped with a rich cream, garlic, spinach, and cheese sauce and baked till golden and bubbling.

Ingredients

  • 1 dozen freshly shucked large oysters
  • 50 g butter
  • 2 tablespoons finely diced eschallot
  • 1 small clove of garlic minced
  • 50 g baby spinach leaves
  • 1/3 cup dry white wine
  • 1/2 cup pouring cream
  • 1/2 cup grated cheddar
  • 1/4 teaspoon fine white pepper
  • 1/2 teaspoon fine sea salt
  • 2 cups rock salt
  • fresh lemon to squeeze

Instructions

  • Set shelf one level above the oven's center and heat the oven to 180°C (355°F).
  • Eschallots and garlic are added to a medium frypan with moderately melted butter and are cooked until tender (2-3 minutes)
  • Add the wine, cream, 2 tablespoons of the cheddar, salt, and pepper. Gently boil for 5 minutes, or until the sauce has slightly thickened and decreased.
  • On a platter just big enough to accommodate the oysters, sprinkle rock salt.
  • Place the oysters on the tray, using salt to balance each shell evenly. Spoon sauce and spinach over each oyster, finishing with a pinch of cheese. Bake for 20 minutes, or until the tops are slightly browned and bubbling.
  • Serve
