Smoked Sausage Hash

Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp butter
  • 3-4 potatoes cubed
  • 1 package Smoked Sausage Hillshire Farm; sliced
  • 2 peppers diced (red, green, or orange)
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • salt
  • pepper to taste

Instructions

  • In a big cast iron skillet or over high heat, melt the butter and olive oil together. Salt and pepper the potatoes and then incorporate them.
  • Cook for 10 to 15 minutes, stirring periodically, until desired crispiness is achieved. Use a slotted spoon to place away.
  • Cook the smoked sausage for 2 to 3 minutes on each side, or until just barely browned, on a medium-low heat.
  • When the peppers are tender and the onions are soft and translucent, add the onions and cook, turning frequently. For 30 seconds, add the garlic and sauté it. Add salt and pepper to taste.
  • Cooking the potatoes for a further minute or two after stirring them back in. If necessary, season the food with additional salt, pepper, or other spices.
