Ingredients

  • 1 kilo sardine
  • 6 tablespoons white wine
  • 4 tablespoons lemon juice
  • 6 tablespoons olive oil
  • 1 1/2 tablespoons salt
  • 1 tablespoons pepper
  • 1 tablespoons oregano
  • 3 clove garlic cut into slices
  • 1 tomato cut into cubes
  • parsley finely chopped
  • 1 lemon cut into slices

Instructions

  • Make the anchovies clean. Remove the scales with a knife, being sure to use the blunt edge. Then, using a sharp knife, cut towards the abdomen to remove the heads. Remove the intestines and spine by scoring the animal from the belly to the tail. The fish ought to stay fastened to the rear. You can ask your fisherman to clean them for you if you don't want to clean them yourself.
  • The fish should be washed in running water and allowed to dry in a colander.
  • Wine, lemon juice, olive oil, oregano, salt, and pepper should all be combined in a dish.
  • The fish should be placed in a baking dish, covered with the marinating, and left to sit at room temperature for 30 minutes.
  • Set the fan setting on the oven to 180 °C (350 °F).
  • 30 minutes of roasting the sardines with the garlic pieces distributed.
  • Remove the pieces of garlic from the oven.
  • Along with the tomato, parsley, lemon segments, and freshly ground pepper, serve the sardines warm.
