Ingredients

  • 12 chicken thighs
  • 6 tablespoons olive oil divided
  • 4 limes zested and juiced
  • 6 cloves garlic minced
  • 2 tablespoon honey
  • 2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup cilantro leaves chopped

Instructions

  • Two tablespoons of olive oil, lime juice and zest, cumin, chili powder, minced garlic, honey, salt, pepper, and cilantro are all combined in a mixing bowl. In a food processor, you can also pulse until everything is incorporated.
  • In a bowl or shallow dish, combine the chicken thighs with the marinade. Chicken should be refrigerated for 30 to 60 minutes to marinate.
  • When the chicken has finished marinating, remove it from the refrigerator and allow it to remain at room temperature for 10 to 15 minutes.
  • Set your oven's temperature to 425 degrees Fahrenheit.
  • In a big oven-safe skillet, heat the last tablespoon of olive oil over medium-high heat. With the skin side down, sear the chicken for 5–6 minutes, or until golden brown.
