Ingredients

  • 7 oz. Enoki mushrooms
  • 1 tablespoon coconut oil
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon black sesame seeds
  • 1 tablespoon sliced chives

Instructions

  • Remove 1 inch from the mushroom bases. Rinse the mushrooms gently, then pat them dry. enoki mushrooms missing their roots.
  • Divide the enoki into six or so bundles.
  • Around six bundles of enoki mushrooms.
  • A cast-iron skillet on medium heat is used to heat the oil. The mushrooms should cook for two to three minutes with frequent turning. In a cast iron pan, oil is used to cook enoki mushrooms.
  • Cook over low heat for an additional 30 seconds after adding the teriyaki sauce and soy sauce. To taste, increase the sauces. In a cast iron pan, enoki mushrooms are cooked with soy sauce and teriyaki sauce.
  • These tasty Enoki mushrooms can be used to top tofu steaks, add to veggie sushi rolls, or be served over sushi rice. Sesame seeds and chives are used as a garnish.
