Ingredients

  • 2 rocket
  • 12 ripe figs halved
  • 30 g Grana Padano finely grated
  • 1 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tsp pink peppercorns

Instructions

  • Place the figs and rocket on a dish with the cut side up. Blend the remaining ingredients—aside from the pink peppercorns—until they are completely smooth (or use a stick blender). Blend again until emulsified after adding a splash of freshly boiled water.
  • After pouring the dressing over the figs, top with crushed peppercorns.
