Ingredients

  • 250 ml water
  • 4 large cucumbers peeled and sliced into half moons
  • ¼ cup freshly squeezed lemon juice
  • cup sugar syrup
  • ½ cup vodka
  • 12 ounces chilled club soda
  • ¾ ounce Simple Syrup
  • Lime wedges

Instructions

  • Bring 1 cup water to a boil over high heat.
  • Add 4 cucumber slices to the boiling water and cook for 2 minutes.
  • Remove cucumbers from the pan and immediately plunge them into an ice bath until they reach room temperature.
  • In a blender, combine cucumbers, ¼ cup lemon juice, ⅓ cup sugar syrup, ½ cup vodka, 12 ounces club soda, and Simple Syrup made by combining equal parts sugar and water.
    Blend until smooth.
  • Pour contents of blender through a fine mesh strainer set over medium bowl.
  • Garnish with lime wedge and serve cold.
