- 1 cup shortening
- 1 3⁄4 cups sugar
- 1 teaspoon vanilla
- 3 eggs separated
- 1 cup cold water
- 1⁄3 cup tomato puree
- 2 1⁄2 cups cake flour
- 1⁄2 cup cocoa powder
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
Heat the oven to 350°F.
Greased and floured 2 8 1/2 inch cake pans
Combine the shortening and sugar in a mixing bowl.
Mix in the vanilla extract and egg yolks.
Mix in the cold water and tomato puree.
Whisk the egg whites until stiff, then fold them into the egg/tomato mixture.
Sift together the cake flour, cocoa powder, baking soda, and salt.
Combine the dry and wet ingredients.
Fill cake pans evenly with batter.
35 to 40 minutes in the oven
Allow cakes to cool on wire racks before icing with chocolate buttercream.
Optional garnish: fresh strawberries.
