Ingredients

  • 1 cup shortening
  • 1 3⁄4 cups sugar
  • 1 teaspoon vanilla
  • 3 eggs separated
  • 1 cup cold water
  • 1⁄3 cup tomato puree
  • 2 1⁄2 cups cake flour
  • 1⁄2 cup cocoa powder
  • 1 1⁄2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Heat the oven to 350°F.
  • Greased and floured 2 8 1/2 inch cake pans
  • Combine the shortening and sugar in a mixing bowl.
  • Mix in the vanilla extract and egg yolks.
  • Mix in the cold water and tomato puree.
  • Whisk the egg whites until stiff, then fold them into the egg/tomato mixture.
  • Sift together the cake flour, cocoa powder, baking soda, and salt.
  • Combine the dry and wet ingredients.
  • Fill cake pans evenly with batter.
  • 35 to 40 minutes in the oven
  • Allow cakes to cool on wire racks before icing with chocolate buttercream.
  • Optional garnish: fresh strawberries.
