Ingredients

  • 4 cups Chokecherry Juice
  • 6 cups Sugar
  • 1 lemon Juice

Instructions

  • After washing the fruit, add water, and simmer for 15 minutes.
  • Refine juice.
  • Juice is measured into an 8 to 6 quart kettle.
  • Mix in the pectin.
  • Add sugar, stir, and bring to a rolling boil after bringing to a boil.
  • 2 minutes, exactly, to boil.
  • Pour into jars after skimming.
  • Adjust lids and clean the rims.
  • Process for five minutes in a pot of boiling water; remove to a safe countertop; and allow to cool completely, undisturbed.
