Ingredients

  • baked pie crust
  • salt and freshly ground black pepper
  • 2 2 tablespoons Dijon mustard
  • 4 4 peeled and sliced tomatoes
  • 4 oz grated white cheddar cheese
  • 4 oz yellow grated cheddar cheese
  • 1/2 cup mayonnaise
  • 1/3 cup freshly grated Parmesan cheese

Instructions

  • Heat the oven to 350 °F.
  • The mustard should be applied to the pie crust's interior. Sprinkle salt and pepper over the crust before adding the remaining half of the tomatoes. Add the Cheddar on top. Mayonnaise and Parmesan are combined, then smeared over the pie.
  • Bake for about 20 minutes, or until bubbling. Cool down. Add the remaining tomatoes on top. At room temperature, serve.
