Ingredients

  • 1 ¾ cups all purpose flour
  • 2 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 large egg slightly beaten
  • 3 tablespoons canola oil or vegetable oil
  • 1 cup buttermilk
  • Maple Syrup to serve

Instructions

  • Combine the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl until well combined.
  • In a separate bowl, whisk together the egg, oil, and buttermilk until smooth.
  • Whisk together the egg mixture and the dry mixture until no flour streaks remain. Avoid over-mixing. The batter will be thick and lumpy.
  • Allow the batter to rest for 5 minutes while you heat a skillet to medium heat (about 350 degrees F).
  • Scoop the batter (about 14 cup) into the skillet. Cook for 1-2 minutes per side, or until both sides are golden.
