Ingredients

  • 100ml chardonnay vinegar
  • Finely grated zest of 1 lime
  • 3 finger limes, halved lengthways
  • 24 freshly shucked rock oysters

To Serve

  • Rock salt
  • Salmon pearls
  • lemon balm leaves

Instructions

  • Whisk together the vinegar, lime zest, and finger lime pearls in a bowl.
  • Place oysters on two sizable serving dishes along with a layer of rock salt.
  • Pour dressing over oysters and garnish, if desired, with lemon balm and salmon pearls.
