Ingredients

  • 1 1/4 cup self-rising flour
  • 3/4 cup yellow cornmeal
  • 1/2 cup sugar
  • 2 eggs
  • 2 tablespoons honey
  • 3/4 cup buttermilk
  • 1/2 cup butter

Instructions

  • After greasing a 12-cup muffin tin, heat the oven to 350 degrees.
  • Combine the cornmeal, sugar, and flour in a sizable basin.
  • The eggs should be beaten until smooth in a different bowl. Buttermilk and honey can now be added. Continue whisking until everything is well combined.
  • Flour is added to the buttermilk mixture.
  • While stirring, take care not to overmix.
  • Be aware that lumps in the batter are completely natural.
  • Fill the muffin tray with the batter. Each cup should be 3/4 full of the filling.
