This Sloppy Jane dinner is so satisfying and one that the whole family will love, with ground beef tossed in a delicious and savory sauce and stuffed in a lovely baked sweet potato.
Clean and dry the sweet potatoes. With a fork, pierce each sweet potato several times. Place the sweet potatoes on a foil-lined rimmed baking sheet. Bake for 45 minutes, or until the potatoes are tender.
Meanwhile, in a large skillet over medium-high heat, heat the oil. Cook until the onions, bell pepper, and garlic are slightly tender, about 4-5 minutes.
Cook, breaking up the ground beef with the back of a spoon, until the meat is browned and cooked through (no longer pink), about 7 minutes more. While browning, season with salt and pepper.
Cook, stirring constantly, until the tomato paste, mustard, chili powder, and red pepper flakes are well combined.
Cook, stirring constantly, until the coconut aminos have reduced.
Remove from the heat, cover, and keep warm until the potatoes are done.
When the potatoes are done, remove them from the oven and cut a slit in the top of each one. Stuff with sloppy joe mixture and serve.
