Preheat the oven to 350°F and prepare an 8-inch baking pan with parchment paper.
Mix together the butter and brown sugar until smooth. Combine the egg, vanilla extract, and coconut essence in a mixing bowl.
Just until the flour mixture disappears, fold in the flour, baking powder, salt, and shredded unsweetened coconut. Stir in the chocolate chips and bake for 15-16 minutes on a baking sheet lined with parchment paper.
Remove the coconut bars from the oven and set them aside to cool completely.
Prepare the lime frosting
In a large mixing bowl, cream together the softened butter, powdered sugar, milk, lime juice, and lime essence until light and fluffy.
Stir in a little lime green food coloring or a combination of yellow and green food coloring to achieve the perfect Starbucks coconut lime bar icing hue.
Drizzle melted white chocolate over the chilled coconut bars. You can use a piping bag, a ziplock bag, or even a spoon if you don't mind bigger streaks. Sprinkle with additional coconut, slice, and serve!
If you prefer these cooled, place them in the refrigerator until firm, then serve with a large glass of milk or your favorite Starbucks coffee!
