It can be served as a side dish with just two ingredients—shrimp and celery—or it can be mixed with rice, noodles, or salad. We had to include this celery dish in our cookbook because it is one of our favorites.
Mix the shrimp with 1 tablespoon of the oil, fish sauce, sugar, and pepper to taste in a large bowl. Toss the shrimp gently to coat them.
A sauté pan is hot to the touch. Stir the remaining 1 tablespoon of oil into the pan once it is very hot. Stirring occasionally, fry the celery for 1 minute after adding it.
After adding, saute the shrimp for one minute. The shrimp should be cooked for a further minute, or until pink.
