Ingredients

  • 800 g 1,7 lb of salted codfish
  • 1 kg 2,2lb of potatoes
  • 50 g 1,7 oz of “Taggiasca” pitted olives
  • two cloves of garlic
  • 30 g 1 oz of pine nuts
  • a bit of parsley
  • Extra Virgin olive oil

Instructions

  • The salt cod must be soaked in fresh water for 48 hours, with two or three water changes every day, before you start making the creamed sal fish with potatoes recipe.
  • The fish loses a significant amount of salt in this method.
  • Boil the codfish for around 20 minutes without salt when ready.
  • Meanwhile, in a big pot, bring previously chopped potatoes and saltless water to a boil.
  • Remove the codfish from the cooking water after about 20 minutes and begin to remove the skin and bones.
  • The potatoes should now be drained and put into a bowl.
  • Using a wooden spoon, stir in the salt cod, breaking and cutting the fish into large pieces
  • then gradually incorporate the rest of the ingredients (olives, parsley, pine nuts and garlic).
  • To create a creamy mixture, stir while adding lots of extra virgin olive oil.
  • Don't forget to remove the garlic before serving the potatoes and creamed salt cod. Add some olives and pine nuts as a garnish.
  • Serve this meal as an appetizer or a main course, warm or chilled.
