Large bowl of beans covered with cold water; overnight soaking recommended.
The beans should be drained, rinsed, and then placed in a big pot. Chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper, salt, and pepper are added to the beans after covering them with water. Bring to a boil, then decrease the heat to low and simmer until the beans are cooked, 2 to 3 1/2 hours.
