A hefty saucepan or deep fryer should be used to heat the oil until it reaches a temperature of 185C/365F.
In a medium bowl, mix the flour, baking powder, salt, and sugar. Whisk the egg, milk, and shortening in a another basin. Mix the dry ingredients and the liquid mixture together. Fold the corn through.
Spoonfuls of the nugget batter should be dropped into the hot oil. Fry for 2 to 3 minutes or until golden.
The nuggets should be taken out of the oil and put on paper towels to drain. Serve right away.
