Truffle butter is one of those things where it doesn’t really matter whether you buy good quality or not because there’s no way you could use it all up in just one sitting!

However, when I started making this truffle butter at home, I found out quickly that it didn’t always last as long as I would like.

So, what did I do about it?

Well, I discovered that by storing my truffle butter properly, I was able to extend its shelf life significantly.

Here’s how to store your truffle butter so that it lasts longer.

  • Keep it cool – As much as possible, keep your truffle butter refrigerated until you need it. If you have the opportunity to purchase it frozen, do so immediately. The reason being that freezing will help preserve the moisture within the truffle butter which makes it more stable for later usage.
  • Wrap tightly – You don’t want any air molecules getting into your truffle butter while it’s still fresh. Wrap it securely in plastic wrap and place it back into the fridge. Remember, the temperature inside should be around 4 or 5 degrees Celsius (39-41 degrees Fahrenheit).
  • Use it right away – Once you start using your truffle butter, it will begin to spoil. Use it before it goes rancid. Don’t try to save it for later unless you plan on consuming it very soon after opening it.
  • Strain truffle butter – Storing truffle butter involves keeping it cold but also ensuring that it stays free of mold. To achieve this, strain it through cheesecloth or even fine mesh strainer. Discard the solids once they pass through. Then, carefully pour the strained liquid into another container that’ll fit. Refrigerate that and use it within two weeks.

Now let’s talk about how to make truffle butter at home.

First, we’re going to gather our supplies together including a food processor, garlic press, heavy duty metal bowl, cheesecloth, and a large saucepan.

  • Add 1 cup unsalted butter, 2 cups chopped peeled white onion, 1/4 cup minced garlic, and 3 tablespoons salt to your food processor. Pulse until smooth.
  • Pour mixture into a medium sized saucepan and add 1 pound whole black truffles. Cook over medium heat stirring constantly until melted completely.
  • Once melted, turn off heat and allow the mixture to cool down to room temperature. Remove from stovetop and set aside.
  • In a separate bowl, combine 8 ounces cream cheese with a pinch of salt and blend thoroughly until creamy. Set aside.
  • When truffle butter mixture reaches room temperature, remove from heat and transfer to an ice bath tub filled with water and stir vigorously. Allow mixture to cool slightly before transferring to the refrigerator.
  • After cooling, strain mixture again through cheesecloth or fine mesh strainer. Pour strained liquid back into the same vessel and discard remaining solid pieces that aren’t pureed.
  • Transfer mixture back into saucepan and cook over low heat for 15 minutes. Stir frequently to avoid burning the bottom of the pan.
  • Remove from heat and add cream cheese mixture. Blend until combined. Transfer to a glass jar and seal tightly. Store in the refrigerator until ready to serve.
