This recipe is one that I got from my mother-in-law, who has been making them since she was young.

We decided to make our own version of these pancakes instead of trying to replicate hers exactly.

Ingredients:

1 cup all purpose flour (we used white whole wheat)

1 tablespoon baking powder

½ teaspoon salt

¼ cup granulated sugar

3 large egg whites

⅔ cup buttermilk or unsweetened plain yogurt

½ cup melted butter (or vegetable shortening)

Directions:

First, prepare your air fryer basket by placing two paper towels inside the basket.

Place the rack into the basket, then place the basket onto the air fryer heating element.

Turn the temperature down to 350 degrees Fahrenheit and let the air fryer preheat for 5 minutes before cooking.

Next, add ½ cup of the flour directly into the middle of the air fryer basket.

Then, mix the remaining 1 cup of flour with the baking powder, salt, and sugar until they are thoroughly combined.

Next, whisk together the 3 large egg whites, ⅓ cup of buttermilk, and melted butter (or shortening) until well blended.

Pour the batter mixture slowly over the dry ingredients while gently stirring the batter with a fork until all of the wet batter is incorporated into the dry ingredients.

After mixing the batter completely, pour the batter into the air fryer basket.

Cook the pancakes for 4 minutes at 350 degrees Farenheit, turning them halfway through cooking time.

Once the pancakes have turned golden brown, remove them from the air fryer basket and serve immediately.
