  • 4 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp brandy
  • 8 cups beef stock
  • ½ cup dry white wine
  • 2 minced garlic cloves
  • 1 tsp sugar

  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • ½ tsp freshly ground black pepper

  • 1 cup grated Gruyere

Instructions

  • The onion caramelization In a big pot, warm 3 tablespoons of olive oil over low heat. Toss the thinly sliced onions with the oil after adding them.
